Omelette

This morning I asked Jo if she wanted omelette for dinner. The answer was yes.

Here is the recipe:

4 eggs
1/2 cup milk (or cream)
chopped chives
smoked salmon
grated cheddar cheese
salad to garnish
salt and pepper to taste.

Tabasco is optional.

Beat the eggs.
Add milk, beat some more.
Add chives, beat some more.
Add cheese, beat some more.
Pour mixture into medium-hot frypan and cook on the stovetop for 3-4 minutes.
Remove from heat and place the pan under the griller for a further 2-3 minutes.
Slice in half.
Lay smoked salmon into 1/4 and fold in half again.
Serve with salt pepper and garnish.

It was delicious.
