To my big brother from the other mom,
a while ago you asked me for a recipe. So here we go.
Chili a la Till
You take onions, a lot of them, chop them and then fry them with oil in a big pot. I use organic canola oil, but you don't have to go that exquisite. The normal vegetable oil will do the same job.
The onions can take their time, so you will have enough time to cut the other vegetables.
Cut the carrots into slices, the bell peppers (I prefer orange, yellow and green ones to add some colours) into stripes / pieces.
By this time the onions should be glassy and ready to add the meat. If you want to prepare a vegetarian chili, skip it (; When the meat is done, add the carrots and soon after the sugar. Burn the hell out of it for like 1-2 minutes and then add the bell peppers.
Cause I am a lazy ass, I'm using canned tomatoes. If you want to use fresh ones I would peel them and you will need many more.
I cut the tomatoes in a bowl before I add them (I don't want to smash the other vegetables while trying to smash the tomatoes).
Time to add salt, pepper and the other spices. Then let it cook a few minutes.
Now add corn and kidney beans and let it cook for a while. Clean the mess in the kitchen or something. Taste it, maybe add some more spices and then add champignons and olives (mushrooms in halves or quarters, depending on their size, olives in halves).
Now you can let it on lowest temperature for an half our or so and then taste again. Maybe add some more spices.
The chili tastes best if you eat it the next day.
You don't have to follow the procedures strictly, chili is hard to mess up and everybody does it his way. It's kind of a ritual and fun cooking, especially with friends (;
Two more tips for your "party chili":
1) Prepare a separate pot for the meat, so the people can choose if they want to add it or not.
2) Don't prepare it to spicy (hot). Buy some some hot curry paste or similar so everybody can choose his one level of spiciness.
What you need:
3-5 onions
300g mincemeat (cow, meat is absolutely optional)
2x 500g canned tomatoes
4-6 carrots
2-3 bell paprikas
1 big can corn
1 big can kidney beans
500g champignons
1 glas olives
The spices:
salt, pepper
sugar
basil, thyme, oregano, rosemary (a pinch of each)
maybe two or three spoons red paprika powder
lemon (just a little bit juice)
Like I said there are many ways, just try out what you like and don't worry if you have not all the spices... those are just my favourites.
