Open crumb

With the cooler weather, I usually embark on a spree of baking bread (quite a bit of it being given away to neighbors). I also tend to play with the recipe and technique. This is a high hydration loaf, leading to a very open crumb (large holes). I've been sharing photographs online for a while.
