Chopped Onion

I made a sausage "casserole/stew" type of thing, which included chopped onions, this was a piece of a red onion.

I used some of my Italian Chilli Oil, after frying the sausages a bit in regular sunflower oil I chopped them into "chunks" and added onions, carrots, garlic and some Italian mixed herbs and lightly fried them using a small splash of the chilli oil with some regular olive oil. I then added a bottle of Eden Whisky aged beer and some beef stock (oxo cube, hot water & gravy granules). It turned out pretty good, a lot sweeter and spicier than I expected, I think the whisky aged beer helped sweeten it as did the chilli oil, it turns out it is fairly sweet & spicy.
