At last

Sourdough that has worked.

I had been using the Paul Hollywood recipe but it just wasn't working for me.

I returned to the River cottage handbook No 3 - bread and I am very impressed by the result.

I substituted some of the liquid in the sponge with Mackeson stout which has added to the colour and gives a malty smell when the bread is toasted.
