Brigadoon!
Weird weather today. Very misty, dark and damp yet friends arrived for coffee and were totally bemused as 300 yards up the road the sun was shining and the sky was bright blue. As the drove nearer they said it was like Brigadoon appearing from the mist! David has also confirmed it is a beautiful day in St Andrews.
Hmph!
After lunch the sun tried really hard to break through and there was a brief glimpse of blue sky but within 20 minutes the mist had descended again. I was determined to get an outdoor blip today so took advantage of the 20 minute fog break and nipped into the garden. I was surprised by how mild it was. It's made me long for Spring.
Builders back again to finish putting the new drain in the driveway and to fix a leak in one of the upstairs bedroom windows. There’s also a leak at the French doors in the lounge but it needs to be dry before they can work out where the water is coming in. Oh the joys of living in an old house.
The citrus chilli chicken we had for tea last night was delish, so for those who asked, here is the recipe.
Serves 2
2 chicken breasts
Grated rind of a lemon and a lime
Dried chilli flakes
Salt & pepper
Wrap the chicken breasts in cling film and bash with a rolling pin until they are flat.
Sprinkle both sides with salt, pepper, the grated rind and chilli flakes (the amount of chilli flakes will depend on how hot you like it. I used a heaped tablespoon.)
Grill or fry in a tablespoon of olive oil for 5 minutes each side or until cooked through.
I can tell you, they were delish. As it was a fasting day we just had them with a large, green salad but on a non-fasting day I would add homemade oven chips and make some lemon/lime mayo by mixing the juice and grated rind of a lemon and lime with some low fat mayo.
