Pockets

Success! I've been trying to make pitta breads over the xmas holidays. The results until now have been delicious but with no pockets inside... which is kind of essential in a pitta.

A wee trawl around the internet and I sussed out that my oven just wasn't hot enough. So this time I ramped it up to 11 and left the baking sheets inside to get hot,hot, hot. Of course this did then involve all the smoke alarms going off and various cries of:

'Is the oven supposed to be on?'
'Yes, it's fine'
'But there's nothing in it?'
'I know'
... silence filled with smoke and thoughts of madness

But it all turned out well in the end and the Pittas were tasty and had big pockets to be filled.
