Mexican colouring?

Made some slow cooked Mexican stew for dinner. This is actually a photo of the photo in the book, of what it's meant to look like!
Mine ended up looking so much more like a bowl of anaemic food scraps that I couldn't put it on here.. I think they must have used some sort of food colouring for the book photo!
