Kuri - chestnuts

Chestnuts are popular in Japan, especially at this time of year. They are used in all kinds of recipes including confectionery. I love roast chestnuts, they remind me of Christmas so you can imagine how disappointed I was when I got home and discovered that the HUGE bag I bought from this stall were not roasted at all but fresh! Duh!

Chestnuts are my favorite ingredient to use in the fall, especially for the holidays. I always find that they are meaty, hearty and have a mysterious refinement when cooked or roasted over sea salt.
