Homemade oatcakes

They're incredibly easy to make.
Recipe for Dave, you know who you are :-)

150g oats (mix of fine and medium or jumbo)
35g butter
Flour for dusting
Boiling water
Preheat oven to 180 deg C /gas mark 4 and line a baking sheet with baking paper.
Add oats to a large bowl and season with salt and pepper.
Melt the butter and mix with the oats.
Pour in enough water from the kettle until it begins to hold together and bind. (Knead it with your hands to check)
Turn out onto a floured board and roll out to 5mm thick.
Cut into rounds with medium cutter and place on baking sheet.
Bake for around 20 mins and then turn them over and cook for another 5-10 mins.
Cool on a wire tray.
