Coincidentally I found that 'cinque' which means five in Italian means that when you boil up 3kg of quince and strain them then boil the liquid with sugar.. you get 5 pots of jelly!!!

Not nearly enough in my books so the rest will be boiling and straining this evening with a bit of luck.
