What To Do With Turkey?

So turkey is not my favourite food at the best of times but for some reason I get a huge turkey at Thanksgiving and then try to figure out how to get rid of it for days and days after. Tonight's meal is a bun with salsa, turkey and old cheddar. Actually really really good!
