eclectic or eccentric?
Tonight I found quite a few things in the kitchen to be used up, which gave me a bit of a challenge finding something to make for dinner.
I remember a TV show like that years ago. Ready, Steady, Cook I think.
3 eggs, a bit of feta, a carrot, a golden beetroot, half a pepper and a few spring onions.
End result... an omelette with garlic, spring onion, pepper & feta. A salad with kohlrabi, a tomato & the carrot. Another wee salad with the beetroot, some feta & spring onion.
Cider vinegar & olive oil in the vinaigrette for the beetroot salad. Sherry vinegar & olive oil for the other one.
Most of it grown and bought 20 minutes from here (oil, vinegar, pepper & feta not really Fife specialities). Yet...
Enjoyed making it, and eating it.
Perhaps the best part of the day, leaving aside a lovely coffee with the lovely N at the end of our meeting.
