Flip Flop

It’s hard to believe that we had such lovely weather yesterday, looking at the same location today, where the first couple of hours of The Bite of Bellingham took place in wind and rain. (The rain ended just as we were leaving.)

With samples of such delights as Pork Belly Puff* and Shrimp-n-Grits** available for just two or three dollars, not to mention Chocolate Bourbon Pecan Pie, all of which I tried, Bellingham residents were not about to be deterred by the driving rain.

Here’s an example of what was available -- the Oyster Bar’s Salmon Taco, which included tamarind-crusted wild salmon with ginger peach curried mango salsa, served in a taco on red cabbage with a saffron vinaigrette and cardamom crème fraiche, for $2.

* Cured, spiced, and smoked pork belly with pomegranate gastrique, served on a puff pastry and topped with micro arugula, from Bayou on Bay, a Cajun/Creole restaurant downtown.

** Sauteed gulf shrimp, bacon, roasted onions, kale, cheddar grits from StrEAT Food, which many consider to be the best food truck in the city -- and after tasting this, I’d agree!
