Damson Gin
As planned I made the Damson Gin but not any Damson Jam, I decided to double the quantity of Gin which is now maturing . The sugar at the base of the jars will dissolve as it is agitated each day for a week. After 3 months it is then ready to bottle. Just in time for some to be given for Christmas Presents.
