Between fen and mountains

Pine syrup

These pine cones are growing down by the river. A few weeks ago, I saw hundreds of plastic buckets laid out along a high mountain path. I then read subsequently in the local paper that they belong to an entrepreneur from Andorra who is filling them with pine cones. With the addition of sugar, after a few days the cones give off a syrup that can be used on crêpes, for sweet making and in soaps. The syrup also has medicinal properties. It is an Andorran household recipe but has never been tried commercially in France before.
