Hearty turkey casserole
There aren't many weightwatchers recipes I would recommend, there aren't that many I have cooked more than once but this one is a winner even the boy likes it. Although I use chicken instead of turkey.
Low fat cooking spray
500g turkey breast diced
2 large leeks
400g butternut squash chopped
2tbsp plain flour
425ml hot chicken stock
40g puy lentils
1 tsp dried tarragon
1 tbsp fresh tarragon
2 tbsp half fat creme fraiche
Heat lidded casserole dish on job, spray with cooking spray. Season turkey with black pepper, add to casserole dish and brown for four minutes.
Add leeks, cook for 2 minutes then stir in butternut squash and flour mixing well to coat. Gradually add stock and mix in puy lentils and tarragon. Bring to simmer and cook for 30 minutes until tender.
Stir in Creme fraiche just before serving.
Serves 4, 293 calories per serving
