Mediterranean Vegetables with Feta.
I love baked vegetables like Ratatouille or something like this dish above.

The choice of vegetables is according to our preferences. Here is the recipe for my personal choice:
Sweet potato, cherry tomatoes, sliced shallots (or red onion).
aubergines (I like the skinny ones), courgettes, brown mushrooms, red or yellow bell peppers, black Greek olives 
Sprigs of fresh thyme, rosemary, sea salt, pepper. Sprinkle over olive oil and toss with vegetables. I put about 2 tablespoons. A little more can be added, depending on the quantities of vegetables. You can see that I've cut the vegetables into similar-sized pieces so that they cook evenly.

Dice the feta and spread evenly over the vegetables. I took the photo with only half the amount of Feta so that we could see the vegetables more clearly. I added the rest after the photo!

Bake in a preheated oven at 200C, reducing to 180C after half an hour. At the same time, toss the vegetables and make sure there is enough oil. Bake for a further 20-30 minutes until the hardest vegetables are just tender.
While everything was cooking, I prepared some green beans to accompany the dish instead of an extra carb.  I also quartered a small ball of burrata cheese (similar to mozarella, but soft and creamy in the middle). So this gives extra protein.

A delicious early lunch as I have an early afternoon appointment downtown today.
