Old Fashioned Peach Crisp with a Twist!
Hello, it's AUGUST. Have some PEACHES!
I had four peaches left from the latest batch, and on this morning while my husband was in town at a medical appointment, I decided it was time for a crisp. So before I even had breakfast, I made us a peach crisp! Here's a link to the standard crisp recipe.
I know the recipe says apple crisp, but it can be used for any fruit. A crisp is simple to make and requires just a few ingredients besides the fruit: brown sugar, oats, flour, cinnamon, and butter. I adapted it and made something in between a full batch and a half-batch.
I've bought two rounds of peaches so far. The peaches from the first set were juicy and soft. The second set seemed to have been picked while a bit underripe. They were not really juicy and they were a bit too firm. Then again, I had put them in the fridge instantly. The single peach from that set that we left out on the counter DID get sweet and juicy after a few days.
Anyway, this is a roundabout way of saying that three out of four of my peaches weren't quite as juicy as I wanted them to be, so I did a thing I've never done before. To my standard list of ingredients, I added a few teaspoons of DeKuyper peach schnapps, not shown. (I know, what a surprise peachy plot twist!)
And on this evening, while watching a Jurassic Park dinosaur movie on TV, I tried a serving of it, heated in the microwave, topped with (Lord have mercy!) a scoop of Penn State Berkey Creamery August Pie ice cream (!!), with a little caramel sauce drizzled over the top. August Pie is vanilla ice cream, with peaches, nectarines, and red raspberry sauce. Oh my, was it good!
We need a soundtrack song and I wanted something joyous, so here is a silly thing we saw on TV the other night. We were watching a rerun of Will Trent, the one with the fever dream dance sequence that tickles me to no end. I have NO idea who came up with it, or how, but it is insanely good, and creative, and fun.
Betty (Will's dog) is even featured, and we love Betty! When Will Trent is on, T. Tiger, the Moose, the Anteater, Little Bear, and Alex all sit on pillows on the couch and watch with us. They ADORE her. (They also very muchly enjoyed this evening's dino creature feature!) So here is our soundtrack tune: Let's Dance (Donna Summer's Last Dance), from Will Trent.
