Pho Bo
I didn't get about with my camera today, but I did enjoy what is quite possibly my most favorite food: Vietnamese Pho Bo, or beef pho noodle soup.
I'm a lifelong consumer of noodles, both dry pan fried or with a gravy and particularly served in a delicious, steaming hot, and super flavorful broth. Give me an extra large bowl of white rice noodles in pho broth (imagine the fragrant aroma of ginger, big beef marrow bones, coriander, anise, cilantro, onion, celery, garlic and cloves, simmering in your kitchen) top it with paper thin slices of beef, fatty flank, fatty brisket, tendon, tripe, chili slices, cilantro, sprouts, basil, lime and a small dollop of chili - - yes.
