Mystery solved

It's a good day when I have two long standing questions of mine definitively answered in one fell swoop.

In this case: why are these grass seedheads so top heavy, therefore swaying like mad in the slightest breeze AND why do they have a pinky/purple cast when you see great masses of them on the side of the road?
