Sourdough loaves

I got up early to make the bread as I had agreed to play tennis at 9 am. The starter had risen very quickly yesterday evening so I put it in the fridge overnight. I reduced the kneading time and it only took two hours before it was ready to be knocked back. By mid afternoon it was ready to bake. With this weather, the whole process is being reduced by four or five hours. I won my match and was glad it did not last too long. By 11 am, it was far too hot to play. In the afternoon I helped Mrs TT with some curtains and went down into the basement room to read my book where it was a little cooler. I was very saddened to hear of the death of Diogo Jota and his brother. I am a Liverpool supporter but football pales into insignificance with such a tragedy occurring only two weeks after his marriage. He was a family man and that family must be absolutely devastated. It is a harsh reminder that all life hangs by a thread.
