TREE RIPENED PEACHES

Once or twice a year, a giant truck arrives at a local town packed to the gills with tree ripened peaches.  I didn't get to the location until nearly 09:00 hrs. and the line of people waiting to purchase as many boxes as they wanted was more than a football field long.....perhaps I should have said futbol pitch long.  In any case, it was a loooooong line.

Fresh from Georgia (The Peach State) these are the most tasty peaches you can imagine.  I bought a half-bushel and kept a dozen for myself and my wife and the rest I gave to my neighbor who has 5 people in the house.  He loves peaches and is my brother from another mother.

He says..." it really isn't a good peach unless you can bite into it and the juice runs down your chin."   The best way to finish the ripening process is to place them into a paper bag and let them sit for maybe 3 days. The ripening gas, ethylene, will accumulate in the closed bag and accelerate ripening.  When the peaches get soft they are ready to drip down your chin as you bite into them.

I like to make baked peaches occasionally....but to me, cut into pieces and added to a bowl of vanilla ice cream is the absolute best.  I know I've inspired some of you to head to the grocer's and get a few for yourself.  Tasty, I'm sure, but I know they won't be as tasty as these will be in 3 days.
