Chocolate Chantilly
My first steps in the path of molecular gastronomy: A classic chocolate chantilly. It's a mousse made of dark chocolate and orange juice. It may not seem very special, but some time back people thought it was impossible to combine chocolate and water (or juice) and get a decent outcome. If you want to try just use google or youtube to get instructions.
