Adapting and scaling up

A day that included more maths than cooking.

I have two big parties to cater for, so I spent the last couple of days converting Nigella's Fudge Cake recipe into cupcakes with vanilla icing and maraschino cherries.

As usual it took me three attempts to get the recipe how I like.

Then I have to work out how many cupcakes I can get out of one cake batch (36). Also how many cupcakes I can fit into my purpose built cake boxes (24).

Paula, Shayna, Lucy and their families will be tucking into the samples tonight :-)
