Cusco Cooking
During a 4 hour cooking class today we started at the local giant market and learned about all the unusual things used in cooking here in Peru. We also picked out a lot of the ingredients we were going to cook with.
We made passion fruit Pisco sours for our cocktail and ceviche that included a dried toasted corn and some healthy bacteria (sounds awful but was very good). For our main course we made alpaca with potatoes and tubers with a red wine reduction and for dessert we had a combination of exotic local fruits with whipped cream. Everything was delicious and the class was a lot of fun.
