Ace of Base

My Dear Princess and Dear Fellow,

Caro was annoyed. 

She had to do some charity pink ribbon thing for the funeral home this morning. 

That wasn't why she was annoyed. 

"THEY ARE MAKING ME WEAR A BOXY POLO SHIRT!" she fumed. "AND A STUPID HAT."

She looked cute anyway.

I took the opportunity to make a korma base. See my problem was, the last base I made was for a madras, but then I tried to make a korma with it. 

You see? Bound to fail. Failure. It failed. 

Don't get me wrong. It was nice. But no.

So I used HEAPS more cashews and some white onions and NO TOMATOES. NONE THIS TIME.

And so by the time Caro had got back and torn off her stupid hat, I'd taken half of the base, biffed it into the slow cooker with some chicken and was defrosting take-out naan. 

Then we had a nice Saturday afternoon watching telly and hanging out with Punky and Jasper. And in the evening, Crashy came in and rolled around, being sleepy.

As for the korma, when it finally emerged from the cooker, Caro said it was BETTER than take-out korma!!

To be fair, the reason she liked it so much was that it wasn't spicy. At all. There was NOTHING in it that she didn't like. No stray cardamom pods. No sultanas. And NO CHILI. 

So I did find it a little dull myself, but still tasty. It wasn't perfect, but I'm definitely getting there. 

Next up: butter chicken.

And my freezer will be FULL of base.
