SOUTHERN GREENS

Hubby and I picked about 2 bushels of kale from the garden before breakfast this morning. We spent the best part of today striping, washing , blanching and finally freezing it.  We put 4 2 1/2lb.(1/2 gal.) packs and 4 1 1/2 lb.(qt.) packs in the freezer. I also cooked a large pot of kale and collard greens for our dinner with potatoes and perch. Glad to have that big job behind us. It will be nice this winter to have kale and potatoes for dinner.
