Fajitas!

Tonight's supper is fajitas and nachos. A favourite of my family. However, I make up my own jar of spice mix: lower in salt and without anti-caking agents, etc that are often in the ready made kits!!! This is my recipe: use about a tablespoon to 500g (1lb) chicken. You can also use it to make your chilli con carne, adjust the amount used according to your taste, putting in more cayenne if you like things hotter! This makes enough to fill a small jam jar.

2 and a half tablespoons chilli powder
2 tablespoons ground cumin
2 teaspoons dried oregano
1tablespoon garlic powder
1 tablespoon onion powder
Half a teaspoon cayenne pepper
2 tablespoons brown sugar
1 tablespoon paprika
1teaspoon celery salt
2 teaspoons crushed fennel seeds
