Goodness
I got a bit of respite today after the cascade of emails, texts and WhatsApp messages which plagued me over the previous two days.
I used some of the time to book a weekend away for the end of May. It might involve a Parkrun. Who knows?
The other Big Thing today was making soup. I tried a recipe for chickpea, coconut and tomato soup which I have had my eye on for a while. It is delicious (credit to the recipe publisher - I just opened the tins and threw it all in the pot).
Unlike many soup recipes it involves very little vegetable preparation - just an onion and some garlic.
I Blipped it.
I also made a smoothie with the leftover coconut milk - plus the usual green stuff and anti-inflammatory ginger, turmeric etc. Half a red chilli too.
What a healthy "dinner".
