Sweet potato and parsnip gnocchi

Work was on my mind quite a lot in the afternoon. So, to take my mind away from work, I thought I would cook something more complex than I usually do. We had a large amount of parsnips from the veg box, and I find it’s quite hard to locate recipes that are something other than variations on soup or roasting. Yesterday, I found a recipe for sweet potato and parsnip gnocchi, so I thought I would try it. We don’t have a large food mixer, so my dough was blended in small amounts in the Nutribullet. In spite of the mess I made of the kitchen, it all came together quite well. I think my gnocchi were too big; in the picture, they look like meatballs, and I don’t have the signature ridges that are supposed to scoop up the sauce. But, most importantly, they tasted good.
