Sauerkraut time

Finally got round to making another batch, having been working our way through a jar from the Fermentarium (just checking - I prefer mine now!). Not possible to get sharp focus and authentic colour, so I went for the latter. The green bits are crumbled kaffir lime leaves, orange bits carrot, white bits lemongrass. There are a few chilli flakes in there somewhere - and ooh, I spy a couple of fennel seeds! Apart from the red cabbage (and the salt), that's it. Shall probably have to wait a couple of weeks.....
