Chicken Enchiladas for the Soul

It’s cold outside here in Upstate New York and we are all craving comfort food. I haven’t made homemade enchiladas in years, but decided to take the extra time today and satisfy the craving for something cheesy and delicious! I didn’t make the corn tortillas, but everything else was a labor of love, courtesy of an old Martha Stewart recipe from the early 2000’s. (Gee, that is a while back now, isn’t it?)
