Marmalade
This eclectic gathering of jars has remained here since the marmalade was poured through the jam funnel. The jar that didn’t plip has long been consumed and the quaintly bitter cargoe nicely gelled, thanks to the pectin in the lemon pith. My lazy approach to this successful run was founded on ignoring the bitterness myth and simply blending the pulp whilst preserving the orange peel, having largely removed the seeds, obviously. It further transpires that the premature single jar for immediate consumption also gelled very well, so the process can be further shortened. A matching set of jars would, however, be very convenient.
