First Rhubarb.

We live on the edge of the Rhubarb Triangle and always look forward to the first ‘ forced ‘ rhubarb.
As always it has to be a Rhubarb and orange pie.
You an see the process in the collage.
Firstly I have to make the orange sauce in a ‘Bain -marie’ which is a basin over a pan of hot water. Away of thickening a sauce.
Then made some sweet pastry to line the flan dish.
With the excess pastry cut out some strips. Filled the pastry with rhubarb, crisscrossed strips on top.
Baked in a medium hot oven for 40mins.
Served with double Jersey cream.
Delicious! Worth the effort.

Such a cold dismal day.
Mr C enjoyed watching the Leeds match on TV. Big cheer as they won!
After making the pie I set too and made some marmalade.
It takes a long time especially cutting up all the peel into matchstick sized strips.
Again worth it as nothing tastes as good as home made. ( see extra)
Looking forward to having some on toast for breakfast tomorrow.
