Moussaka
I should make more use of blip. I knew it was ages since I'd made a moussaka, but I had an inkling I'd made one during the pandemic. In fact, I made two. One, almost exactly three years ago. Where I commented about needing to slice the potatoes more thinly. And one a couple of weeks later, which I put in the extras here. If I'd checked my blips before making moussaka this time, I would have realised that I should again have sliced the potatoes more thinly.....I failed on that score again. In fact, I should have used the mandolin for both the potatoes and the aubergine (which I roasted rather than fried this time).
Anyway, it turned out pretty well, and there's plenty for another meal. It will go in the freezer.
Cutting supper was probably about the most notable thing that happened today. I'm about to settle in for an evening of reading. It follows a morning of trying to avoid the amazing photos my fellow swimmers were sharing from the north. Both a group that went into Loch Migdale and the Shandwick swimmers were blessed with excellent weather. Here it was rather grey, but at least it was dry and not too cold.
