Odd Flower

I assume this is a flower but I don't recognize it. It is in the bouquet I received before Christmas; I have continued to remove the wilted flowers but these green fluffy balls, greenery, and Mums have continued to thrive.

I got up late and have been trying to catch up with what I had planned for today... a slow go and not much finished.
