Leftover Ham

When I was little I wondered why Christmas was such a special occasion we were treated with two of the worst meats (cold ham and turkey), while at the same time mincemeat suddenly became delicious.  My husband's family does things differently so we usually have something different on Christmas day, but my husband, mil and daughter do love their ham so the Christmas specials get snaffled up quickly in the days following the big event.  We're working through the last of it (cheese and ham croissants all week) but I thought I'd mix things up with a ham and leek pie tonight. My soup-hating son is dreading the next stage, which is enough pea-and-ham soup to drown in.
