What's for dinner?

I tried a new recipe tonight for dinner, Chicken Parmentier - or French Chicken Casserole. It was described as a combination of two yummy things, chicken pot pie and creamy mashed potatoes. It was very good. I always find it a challenge to work my way through a new recipe, but this one was worth it!

The casserole has an interesting history, which the recipe began with. The name of the dish is due to an 18th century pharmacist named Antoine Augustin Parmentier. He spent his life promoting the nutritional value of potatoes, because at the time it was forbidden to grow them in France. Parmentier convinced the Paris Faculty of Medicine to declare potatoes edible in 1772. We are glad he did, my husband loves potatoes!

It was a great use of leftover roast chicken, made even tastier with shallots, garlic, celery, peas and carrots, plus a homemade roux with chicken stock. I made the mashed potatoes myself, which Steve usually does, so he got a break! We share the cooking duties and both enjoy it. That's it, hopefully you're not too hungry now!
