Ratatouille (The Food, Not the Film)

It is a great film that I have memories of watching, and not a bad food either.
Had another unexpected day off today as the creperie is all too quiet so other than cracking on with the reading list for next year and starting a little bit of research for travelling, I decided to make ratatouille with my market vegetables and then mixed in some cous-cous to make it a suitable packed lunch for tomorrow. An evening of tv watching and reading. I thought I was going to come back to England tired but maybe I'll be more rested than ever!

NB: Probably should have cleaned the bowl before I took the photo!
