Archipelago bread
Christmas preparations continued, mostly house cleaning. Hubby worked super hard all day, I had to rest every while and then, so I wasn't as productive. In the evening I baked Finnish Archipelago bread. Hubby kindly helped pouring the dough to the bread tins, so I could take a photo. The bread is more delicious than how the dough looks like! It's easy to make, but takes 4 hours from start to finish. Here is the recipe for two loaves:
Ingredients:
• 1l orange juice
• 50g fresh yeast
• 3dl syrup
• 3dl wheat bran flakes
• 3dl fresh malt
• 3dl rye flour
• 1 tbsp salt
about 1l plain wheat flour
Baking instructions:
• Take 1 dl hand temperature water (i.e. approx.40 degrees Celsius). Dissolve the yeast and the salt
• Add rest of the ingredients while stirring well. Do not knead. The dough should remain quite loose.
• Poor the dough into two greased oven dishes.
• Leave the dough to rise for about two hours.
• Bake the loaves at 175 degrees Celsius for 1,5 hours. Then mix 0,5 dl water and 0,5 dl syrup and spread it on the loaves. Then bake another 30 minutes.
