wet
For the first time in ages, I was confronted by a wet weekend morning.
Reaction - I made gazpacho for lunch.
I hadn't made it for about 20 years. Maybe more.
A huge success. I'll have enough for lunch tomorrow, too. All for about £4.
It wasn't quite chilled enough, but it will be tomorrow. I seem to remember it's better the 2nd day too.
I also seem to remember using sherry the last time, but Delia's recipe uses sherry vinegar. I suspect sherry would be better.
The garnish - in case it isn't clear - is chopped hard boiled egg, croutons & spring onion.
It all takes virtually no effort - chopping a few veggies and then into the food processor.
