Vegan Aubergine Schnitzel

Mr B usually flatly refuses to make VEGAN schnitzel (horror of horrors).

Today he was unusually 'compliant', although it did take some persuasion.

I prepared the 'egg' (flax seed mixed with water- and added seasoning and lemon rind), and fine cornmeal for the 'crumb.

I make it like this, but it never come out as
professionally as his!

Felt tired today. Perhaps a hangover from the jabs, combined with the weather (dull and humid). We went to Westbourne to book hairdresser pre Xmas (forgot to on last visit). Then returned home.
