TWO QUINCES AND ONE LEMON
I had noticed the Quinces on display outside the Fruit and Vegetable Shop.
After a while I bought two of these unusual fruits in addition to a lemon. I had it in mind to make some Quince jam even though I had little experience of jam making.
I looked up a recipe and it said that the writers mother always used 1 kilo of sugar to each kilo of Quinces. However for herself it was too sweet. Taking this on board, I used 500grams of sugar to the 700grams of Quinces plus the lemon.
It was hard work cutting up the Quinces but with the aid of a small electric chopper the resulting mixture looked fine to me.
After cooking I had enough jam for two Bon Mamma jars plus a smaller jar.
The taste is good much to my surprise. It had set. Tart yet with an underlying sweetness.
A cautious success I think.
