Christmas cake

I have been baking our Christmas cake today and it has just come out of the oven filling the house with a spicy aroma. Once it has cooled completely I will wrap it in cling film and let it mature in a dark cupboard until mid December when it will be iced and decorated. It’s a big cake this year as there will hopefully be 8 of us staying with 2 more popping in.
