Carrot, Lime & Beetroot Slaw, Aylesford

Today's image is of the peelings of carrot and beetroot in water after I'd peeled them for the slaw for tonight's dinner. The dish's full title is "chicken and lime quesadillas with slaw". I've never made it before so I'm hoping for good things. Unfortunately, the beetroot juice has got everywhere - it's on the chopping board, the kitchen table, the washing up bowl and all over my hands! Still, if the meal tastes great it will all be worth it.
