Inspired by Masterchef (currently on TV) here’s an attempt at Lemon mini Cheesecake with pistachio and fresh raspberries.

For ‘mini’ they were a little too big, but that was the size of the rings!! Super easy to make. Super easy to eat and they tasted OK!!
