Homegrown Lemons

Well, I've made lemon jelly, lemon syrup cake, crunchy lemon muffins, lemon ice cream and we still have lemons that need using so today I've made lemon cordial which comprises 2 litres of freshly squeezed lemon juice, a kilogram of sugar(!),which has been blitzed in the food processor with the peeled skin of 6 lemons, a litre of water...simmer for 10 minutes or until the sugar dissolves, cool and bottle and refrigerate, ready to dilute with water for a refreshing drink.
