Staffordshire oatcakes day
Apparently, it was Staffordshire oatcakes day today. I couldn’t let that slip by unnoticed so I had a go.
They are an oatmeal pancake rather than the Scottish crisp variety, made with wholemeal flour and yeast. They turned out very authentic looking and are much more tasty than crêpes.
Traditionally they were a way of making a portable bread, using oats which don’t make a good loaf. They tend to be eaten filled with breakfast items, so we had ours with melted cheese and sausages!
