Eclade de moules

I’ve been getting very blip-lazy as we settle into our ‘having gîte guests here routine’, but we went over to Mornac to do some research on éclade de moule for the guests
What you can see is the mussels arranged in concentric circles, opening side downwards. Then a metal basket is put underneath the mussels, and pine needles on top of that. They set fire to the pine bits and wait until the flames die away, brush away the ash and serve the moules on the board for four people.
All the guests want to go now I’ve shown them the photos!
ps the wooden structure you can see in the top left photo is a replica of one of the earliest lighthouses in the area.
